When selecting an eggplant, it’s best to choose one that feels firm and is not excessively large—roughly the size of a cucumber and the diameter of a large pear will do. Smaller eggplants tend to be less bitter (adding a bit of salt can mitigate this) and possess fewer seeds, all of which are safe to eat.
